FCD: Eton Mess Yoghurt Bark


A frozen twist on Eton mess, with creamy yoghurt, juicy berries and crunchy pieces of meringue. Refreshing, ridiculously easy and perfect for keeping in the freezer for a sweet treat.


Ingredients


From the Freezer

  • Strawberries, chopped or sliced

  • Raspberries


From the Fridge

  • Thick Greek or natural yoghurt


From the Pantry

  • Meringue nests, roughly crushed

  • Honey or maple syrup, optional


Method


1. Prepare the tray

Line a small baking tray, dish or container with baking paper.


2. Sweeten the yoghurt

Taste the yoghurt and, if needed, stir through a little honey or maple syrup. You only need enough to take away any sharpness.


3. Spread

Spread the yoghurt over the lined tray in an even layer, roughly 1cm thick.


4. Add the Eton mess toppings

Scatter over the strawberries, and raspberries. Gently press the fruit into the yoghurt, then sprinkle over the crushed meringue.


5. Freeze

Freeze for at least 3–4 hours, or until completely solid.


6. Break into pieces

Lift the frozen bark from the tray and break or cut it into irregular pieces. Enjoy straight from the freezer, or leave it at room temperature for 2–3 minutes first if you prefer it slightly softer.
