FCD: Garlic Butter Sausage Sandwich with Roasted Peppers & Red Onion

Serves 2 (or halve for 1)
A warm toasted baguette filled with juicy sausages, sweet roasted peppers and onions, with a hint of garlic and optional feta.
Ingredients
From your freezer
4–6 chipolatas (depending on how many you have)
Half-baked baguette, bread roll or sliced bread
Garlic butter
Feta (optional)
Handful red pepper
Handful red onion
Thyme
Pantry
1 tbsp olive oil
Black pepper
Method
1. Roast the vegetables
Preheat the oven to 200°C fan.
Toss the frozen sliced pepper and red onion with:
Olive oil
Black pepper
Thyme
Roast for 20–25 minutes, turning halfway, until soft and lightly caramelised.
2. Cook the sausages
Cook the sausages in an air fryer or oven, straight from frozen, until piping hot (ideally, check temperature with a Thermapen or other food probe thermometer).
3. Make the garlic bread
Slice the half-baked baguette open, or grab your bread roll/slices. Spread generously with the garlic butter.
For the baguette or roll, bake for 5 –10 minutes until crisp on the outside and soft in the middle (for the bread, you could fry the bread in a pan with the garlic butter to give it a bit more flavour.
4. Assemble
Fill the warm garlic baguette/roll/slices with:
Warm sausages
Roasted peppers
Roasted red onion
Then, if using:
Crumbled feta
Finish with plenty of black pepper.
