Makes: 1 generous serving
A refreshing cross between a sorbet and a frozen mocktail. Perfect on a warm day, with
bright strawberries, zingy lime and just enough lemonade to keep it scoopable.
Ingredients
From your freezer
150g frozen strawberries
1/4 wedge of lime juice
From your fridge
100g fresh strawberries, hulled
50–75ml chilled lemonade
1 tbsp maple syrup (or to taste)
Method
1. Prepare the fruit
If using a high-powered blender or Thermomix, you can use the frozen strawberries straight from the freezer.
If using a standard blender or food processor, allow the frozen strawberries to sit at room temperature for 10–15 minutes to soften slightly. This makes them much easier to blend and is kinder to your machine.
2. Blend
Add to the blender:
Frozen strawberries
Fresh strawberries
Lime juice
Maple syrup
Blend until smooth. Add the lemonade a little at a time until the mixture reaches the consistency of a soft sorbet or thick slush.
3. Serve
Spoon into a chilled glass or dessert bowl.
If you like you can garnish with:
A fresh strawberry
A slice of lime
Serve immediately with a spoon
Top Tip
If you're serving this as a dessert rather than a drink, pop the serving glass or bowl into the freezer for 15 minutes beforehand. It helps keep the slush beautifully frosty while you eat it.
